Our Story

The sun set behind the Rocky Mountains, casting a golden glow over Leadville, Colorado, as the town buzzed with excitement for the opening of our Leadville Grill and Cantina. We’re thrilled to revive this local gem, “The Grill,” a place rich with history since 1938, now under our care.

I'm Miguel Shipman, originally from Texas, and my wife, Adriana, hails from Mexico. We’ve both been in the restaurant industry since our teens—starting humbly, me at Taco Bell and Adriana at a local spot. Over the years, we've managed to gather 50 years of combined experience, running several successful restaurants in Douglas County. Now, we’re bringing our passion to Leadville.

As people stepped into the newly renovated space, they were greeted by the mouth-watering aroma of sizzling fajitas and the cozy charm of the freshly refinished bar.

I've had the pleasure of hearing some wonderful stories from the locals about this beautiful wooden bar. Apparently, it's been the backdrop for countless celebrations over the years! One tale even goes back 50 years to a wedding party, where the bride danced right on top of the bar. Now, that's a memory!

We’ve worked hard to blend the original wooden features with modern touches—the floors gleam, and the new bar is stocked with an impressive selection of drinks. Outside, the patio twinkles with lights, offering diners a chance to enjoy the stars with stunning views of Mount Elbert and Mount Massive in the background.

Our menu is a mix of NEW MEX, TEX MEX, MEX MEX, and our special twist—OUR MEX. Each dish is a labor of love, reflecting the culinary traditions we cherish.

The evening was filled with laughter, great food, and a welcoming vibe. We walked around, greeting guests and soaking in the joy of seeing this community embrace The Grill once more.

For us, this isn’t just a restaurant; it's a piece of Leadville’s heritage, brought back to life.

The Grill is back, ready to be a gathering place for years to come, where memories, old and new, will be made.
